BBQ Chicken Salad

If your husband is anything like mine, you tell him we are having salad for dinner and he about freaks. We have both really been trying to eat healthier and make better choices. Since we live with my parents I only end up cooking 2 or 3 nights a week which I love. All of us have been trying to eat healthy so lately I try to cut out breads from dinner and eat more veggies or stick to healthier soups and salads. I HATE veggies but I know they are important to eat so I try to make them taste as good as possible. I have always been a fan of salad as long as you add things on it to make it good. Over the summer when my mom and I visited my sister Amanda she made us the best salad. I really liked it and I don't know why it took me so long to make. She gave me a cooking book a few years ago with a lot of her favorites so I have had it for a while. So just so you know the credit goes to Amanda for finding this recipe or making it up cause it is so good. Anyways I warned Tommy ahead of time that we would be having salad. He was a good sport and seemed fine with it. When he got home he asked if I could at least make him some extra tortillas on the side. I told him come on just try it like it is I think you will really like it. So he did. Everyone loved it, my parents included. They said I could make it every week that's how good it is. Honestly I have been wanting it even though we just had it. My mom said it almost tastes like a yummy salad you would get at a restaurant. The best part about it is that it is very feeling. I would say the worse part about it is the tortillas that you fry, which I use so little oil that I didn't even have to let them sit so the oil could come off. Also I know ranch isn't the best but just think about half of it is salsa which is not bad for you. Everything else is good for you. So if you are looking for a very feeling dinner that's not so bad for you, you gotta try this. Tommy said this is his favorite salad now. He likes a few maybe sometime in the near future I will share those recipes on here as well.

BBQ CHICKEN SALAD

(Serves about 4 as a main dish)

Ingredients
  • 3 boneless skinless chicken breast, cubed, cooked
(I grilled mine in a little bit of olive oil with garlic salt. Also if you are new to cooking my cousin taught me to make sure to cook your chicken very slowly so that it doesn’t get hard.)
  • ¾ cup or so BBQ Sauce (we like the honey flavored one)
  • 8 corn tortillas
  • Canola oil
  • 1 cup of your favorite ranch dressing
  • ½ cup of your favorite salsa
  • 1 head of lettuce (more or less)
  • 1 can of corn (drained, warmed)
  • 1 can black beans (drained and warmed)
  • 1 to 2 Avocados (diced)
  • 2 tomatoes (diced)
  • ½ cup red onion (diced)
  • ½ cup shredded cheese
  • Minced cilantro to taste
Directions


  1. Cook chicken
  2. Toss cooked chicken with BBQ sauce and set aside
  3. Cut tortillas into thin stripes and then in half, fry in a very small amount of oil until they get crispy. If needed set on a paper towel to dry.
  4. Make dressing by combining ranch and salsa, mix well.
  5. Now you are reading to make your salad, start with the salad and layer with everything else.
  6. Serve dressing on the side.
